Wacky Cake

I stumbled upon this amazing vegan recipe for chocolate cake at Handmade News - a website published by Artfire. This cake is called Wacky Cake and has it's own Wikipedia entry. It was created during World War II when the rationing of food made eggs and milk scarce. It's also great if you're a half crazy chocolate craving mother who's stuck at home and can't make it to the grocery store. ;)

I made it last night and it's surprisingly moist, rich and very decadent. I used a bundt pan instead of the square one the recipe suggests and I was out of vegetable oil so I used olive oil. Still turned out amazing! I fed it to my kids for breakfast and I'm not ashamed to admit it. I even managed to take a picture of it before it disappeared. ;)



Ingredients:

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons cocoa
1/3 cup vegetable oil
1 tablespoon distilled white vinegar
1 teaspoon vanilla
1 cup cold water

Directions:

Preheat your oven to 350 degrees F.

Combine all dry ingredients in a 9 x 9 inch non stick pan. With a spoon or your finger, make 3 wells. Pour oil, vinegar and vanilla in separate wells and then pour water over entire mixture. With a fork, quickly bring all ingredients together without over-mixing. Bake for 30 minutes or until a tooth pick comes out clean.

I made a quick chocolate icing by combining a teaspoon of softened butter, icing sugar, cocoa and warm milk. But even naked, this cake tastes amazing. I just might have to treat myself to a generous slice later and a hot cup of coffee. You should try this mom!
